    150 175g turkey breasts Fruit spice stuffing 1 small onion 2 cloves garlic peeled and chopped 50g dried apricots 1 eating apple cored and chopped 25g chopped nuts 1 dessertspoon curry paste 2 tablespoons apple juice 3 medium slices Brace s white or wholemeal bread 1 small bunch fresh coriander Sauce 150ml chicken stock 50ml apple juice 1 teaspoon curry paste 4 tablespoons Greek yogurt Let s make it Preheat the oven to gas mark 5 190c 375f Make a deep cut into the centre of each turkey breast to form a pocket To make the stuffing peel and finely chop the onion Melt the butter in a frying pan add the onion and cook until soft Add the garlic apricot apple and nuts and cook for two minutes Add the curry paste and apple juice and continue cooking for another two minutes Put the bread and coriander into a food processor and turn into breadcrumbs Add half the crumbs to the fruit and nut mixture stir and form the stuffing Divide the stuffing between the four turkey pockets Place in an oven dish and sprinkle the remaining crumbs over the top Drizzle with a little olive oil and bake
