    and cater for any event from In home Cooking to Special Occasion dinner parties or other function Feel free to browse around my site If you have comments or questions please drop me a line at franckly delicious gmail com Bon appétit Canard my way April 14 2014 Franck Gautherot From my test kitchen to your home kitchen This month I am sharing a recipe for delicious and easy Duck Breast that will have you and your guest going quakers for more I ll be back next month with another wholesome recipe Happy cooking Franckly Delicious Duck Breast My Way Ingredients Duck breast allow one per person 1 tsp Tandoori masala powder 2 tbsp rapeseed oil Sprinkle of salt For the Salad Handful of baby plum tomato 5 radish finely sliced 2 banana shallots sliced into rings For the Dressing Juice of 1 lime salt pepper Sprinkle of sugar 1 tbsp rapeseed oil 1 tbsp sherry vinegar Grilled Asparagus 8 asparagus blanched For the Mayonnaise 4 free range egg yolks 2 tsp English mustard 1 tbsp white wine vinegar 1 clove of garlic Salt pepper 500 ml rapeseed oil Method Marinate the duck breast in the tandoori massala oils and salt for a few hours Bring out and allow to come up to room temperature at least one hour before cooking To make the mayonnaise place the egg yolks into the bowl of a processor add the vinegar salt and pepper and the mustard and blend Turn the processor on and add the oil in a thin steady stream After a few minutes the mixture will change consistency as you blend and will emulsify Place a non stick pan over a medium heat place the duck in the pan skin side down Turn down the heat then continue to cook
