    to Special Occasion dinner parties or other function Feel free to browse around my site If you have comments or questions please drop me a line at franckly delicious gmail com Bon appétit Pink is the word June 04 2013 Franck Gautherot It is rhubarb season Rhubarb is a very old plant Its medicinal uses and horticulture have been recorded in history since ancient China Rhubarb is extraordinarily versatile you can steam it crumble it jam it roast it make crisps out of it stuff a pie with it bake it in a cheese cake make curd out of it the options are almost endless Know your rhubarb Wash and trim the rhubarb stems before use Discard the leaves as they are poisonous Rhubarb and Ginger Jam This delicious jam is a perfect late winter pick me up combining seasonal forced rhubarb with health boosting ginger www bbcgoodfood com Ingredients 1kg pink rhubarb trimmed weight 1kg jam sugar which has added pectin zest and juice 1 lemon 50g stem or crystallised ginger finely chopped 4cm piece ginger peeled Method 1 Wash the rhubarb under cold running water and slice into 2cm pieces Tip into a large ceramic or plastic bowl and add the jam sugar lemon zest and juice and chopped stem ginger Finely grate the peeled ginger directly over the rhubarb 2 Stir the mixture thoroughly cover loosely with cling film and leave to one side for about 2 hrs to allow the sugar to dissolve into the rhubarb juices You may need to stir the mixture occasionally to encourage this process along 3 Pop a few saucers in the freezer Scoop the fruit and all the sugary juices into a preserving pan and set over a medium heat Stir until the sugar has completely dissolved and bring to

    to Special Occasion dinner parties or other function Feel free to browse around my site If you have comments or questions please drop me a line at franckly delicious gmail com Bon appétit Spring is in the air May 05 2013 Franck Gautherot Source Spring is here The lambs are leaping about the countryside the hedges are at last bursting with radiant greenery and the banks are blanketed with primroses Some of the seasonal delights for this month to be munched upon are mouth watering asparagus al dente purple sprouting broccoli crunchy lettuce salad leaves new potatoes spinach peppery rocket and for those foragers out there wild nettles are always a delight Try this delicious warm lamb salad and get those taste buds sizzling Deliciously warm Sunday roast salad Ingredients 2 2 5kg leg of lamb 4 garlic cloves cut into slivers Few sprigs fresh rosemary 450g baby new potatoes 175ml olive oil 200g French green beans 4 tbsp red wine vinegar Generous pinch of sugar Handful freshly chopped mint 600g cherry tomatoes halved 350g baby spinach leaves rocket or watercress or a mixture of all three Method Preheat the oven to 220 C fan 200 C gas 7 With the tip of a small sharp knife make slits all over the lamb Insert a sliver of garlic and a sprig of rosemary into each slit Weigh the lamb and calculate the cooking time Cook for 20 minutes then reduce the oven temperature to 190 C fan170 C gas 5 and roast for a further 20 minutes per 450g This will give a slightly pink lamb Add an extra 20 minutes if you like it medium Meanwhile cook the potatoes in boiling salted water for 10 15 minutes until tender Drain and spill into a roasting tin drizzle with 2

    out a dietary plan with you and cater for any event from In home Cooking to Special Occasion dinner parties or other function Feel free to browse around my site If you have comments or questions please drop me a line at franckly delicious gmail com Bon appétit April seasonal food March 31 2013 Franck Gautherot As the days get longer help yourself to fresh seasonal flavours Stuff cockles into a rustic paella serve grilled sardines with lemon wedges and sprouting broccoli or wow with native oysters April s seasonal ingredients peak like soufflés so make the most of them before they run out of puff Get cracking with your crabs pick your own watercress and go wild for morels Fresh Mackerel with Roasted Rhubarb Ingredients For the roasted rhubarb 4 5 stalks rhubarb good shake of light brown sugar For the mackerel 2 fresh mackerel filleted a little plain flour seasoned with salt and freshly ground black pepper for dusting a couple of good glugs of fruity olive oil a few sprigs of rosemary chopped 1 tbsp capers drained splash sherry vinegar Preparation method For the roasted rhubarb preheat the oven to 200C 400F Gas 6 Cut the rhubarb into 15cm 6in or so lengths about the length of a wooden spoon handle and place in a roasting tin with half a tea cup of water and the light brown sugar Roast until just soft enough to take the point of a knife about 10 15 minutes Allow to cool then drain reserving the cooking juices Dip the skin side of each mackerel fillet into the seasoned flour to lightly coat Heat the oil in a large frying pan Gently place the mackerel fillets in the hot pan skin side down and scatter over the rosemary Add the roasted
