food Safety ingredient specialist we were aware immediately of the risks associated with sourcing a Wild product and got to work on sourcing from the safest and most reputable sources We opted to run some trials on product from two possible suppliers As a wild product which is handpicked in Woodland across Eastern Europe we anticipated that the contamination risks were high and we were right Along with the risks from contamination was also the consideration of traceability Hartleys conducted full audits of both suppliers to guarantee that we were receiving the safest possible product We required proof from the suppliers that their Mushroom harvesting staff were trained in wild mushroom picking and had a recognised qualification From here we looked at their manufacturing facility and their product process flow As a result of the sample sort results and the overall service and quality of the supplier we decided to go with the supplier whom was more expensive but offered a better product in terms of quality consistency and food safety After this decision we went onto to carry out further trials with the supplier Unfortunately the dice size of the product was proving difficult to achieve consistently Through a

July 2015 How do Hartleys supply the safest frozen ingredients in the world Because we work to the strictest safety specifications in the industry some of which require a 76 reduction in the level of EVM allowed in 1 mt of peas compared to the Campden specification Physical tolerance To achieve Campden CCFRA Grade B Peas in 1 Tonne Foreign Material NIL Foreign Extraneous Vegetable Material NIL Extraneous Vegetable Material 1 000 It s also worth knowing that our peas are not comparable to a Belgium specification because not only do we guarantee this level of EVM we also guarantee no FM which despite other manufacturers working to a nil level we know this is not always the case as this is hard for many processors to achieve Why Hartleys are better than the rest As we are growers sorters and processors we ve become experts in what types of contaminants can be found in a product So everything arriving into the factory is checked again to see if our strict specifications have been met by our approved suppliers We do not take a supplier s word for it At Hartleys the facts don t lie How we achieve this The pea season is very intense and runs for 60 days of the year from July to August Throughout this time all our peas are optically and laser sorted as standard these lasers are programmed to remove possible contaminants such as snails cinders droppings poppy heads etc For heavily contaminated peas we can use a third laser or progress to our 4 sort standard which includes visual inspection as well as all 3 sorters Learn more about our four sort standard We also continuously inspect the product to guarantee the specification to 25kg as opposed to 1mt like Campden Other

is that packing product right first time into the final packaging off the end of the process line is the key to producing the safest ingredients So after lots of head scratching we started to build a new packing and stacking department connected to the end of the freezers in March this year On this occasion the race against time was because of the impending pea season Finally the new packing hall was completed by the end of June just in time for us to trial it for a couple of weeks before our busiest time The most interesting and complex puzzle when designing the packing hall was how to enable product transferal when looking at all the potential packing scenarios We had already decided that using belts to move product was not an option because of the inevitable tracking and fraying issues and so we have ended up with a hall full of augers and vibratory conveyors The beauty of stainless steel transferal throughout is that your main focus of attention becomes the rare earth magnates and metal detectors at the end of the line We were so nervous about whether the new facility would work that we included
