    crisp up Ingredients 4 confit duck legs either bought or see recipe below to make your own 2 x pears peeled 250ml white wine 2 x cinnamon sticks 2 x tbsp of chopped parsley 1 x tbsp chopped Sage 1 tsp ground cinnamon 2 3 spring onion 50 g butter 200g filo pastry Method Dry the duck legs and place in a roasting tin with 1 x 500g tin of duck or goose fat Add a teaspoon of crushed juniper berries 5 6 sprigs of thyme and 3 4 bay leaves Cover the tin with foil and put in the oven at 150 o c for approximately 2 2 ½ hours Once cooked the meat should be tender and soft Take the legs out of the fat but save the fat for roasties Take the peeled pears and place in a small pan with 250ml of white wine top up with water to cover the pears and add the cinnamon sticks Gently poach the pears until soft this will take 30 minutes to an hour depending on how ripe the pears are Take the confit duck legs and pull the meat off the bone and shred mix this with the ground cinnamon spring onion and chopped herbs Dice the pear into small cubes disgarding the core Mix the pear into the duck mix adding a little of the duck fat to moisten the mix if it is too dry Melt the butter Lay the filo on a surface and have some damp tea towels or kitchen roll to hand On a board lay one sheet of filo and lightly brush with melted butter take another sheet and place on top and again lightly brush with melted butter Cover the remaining sheets with the damp tea towel or kitchen paper Cut

    ready You can add some finely chopped chilli to the recipe for a little extra heat This works well served in teaspoons or you could serve on a small piece of rye bread or toasted sourdough we love Brick House Bakery Sourdough Ingredients 400g of Salmon Fillets skinless and boneless 1 tbsp of Baby Capers 3 Spring Onions finely chopped 1 tbsp of Chopped Dill Zest and Juice of 1 lime 1 tsp Wasabi Paste Black Onion or Sesame Seeds Crème Fraiche Radish Method Dice the salmon into small cubes or alternatively pulse for a few seconds in a food processor the salmon should still have texture so keep an eye on it and stop before it becomes smooth Chop the capers Mix the lime zest juice and wasabi paste together Take the salmon and mix with the wasabi lime mix chopped capers dill spring onion and black onion seeds Mix well so all the ingredients are combined to allow the flavours to develop and then pop in the fridge for a couple of hours to marinate Approximately 1 hour before serving take the salmon out of the fridge and allow the tartare to come to room temperature Assembly Place

    chorizo or a little grated parmesan Ingredients 400g Puff Pastry 1 Egg A few sprigs of Rosemary Plain Flour 100g Proscuitto Fig Relish see below For the Fig Relish 250g Figs fresh or dried 250g chopped Dates 2 small Apples 50g dark brown Sugar 4 tbsp of Cider Vinegar 125ml Vegetable Stock Method Make the relish by finely chopping the figs and dates this can be done in a food processor Grate the apples and mix with the fruit Put the fruit into a pan along with the sugar vinegar and stock Simmer gently until you have a thick sticky consistency Allow to cool You could add some mustard seeds cinnamon or a few cloves to add a little spice Assembly Roll out the pasty on a well floured surface into a rectangle approximately 30x 35cm You should aim to have the pastry about the thickness of a 1 coin Brush with a little beaten egg Next spead some of the fig relish over the pastry then scatter with rosemary leaves Lay slices of the prosciutto on top With the shortest sides of the pastry facing you take the long edges and roll them to the centre so they meet
