    is your own personal favourite I tend to try all of the cheeses on a very regular basis They all change with the seasons as do my preferences At the moment I m loving the Ossau Irati a sheeps milk cheese from the Basque Country which is from our cheese mongering friends at Mons we sell it at North Cross Road Hoovering up left over beans on toast with Hafod cheddar from my 2 year old son is another favourite Wash down with a glass of full fat unpasteurised milk more left overs Perfect 4 What is the most challenging part of producing a great cheese Maintaining the quality is essential For example we wash our Bermondsey Spa cheese three times a week in beer at our arch in Bermondsey There are no short cuts each individual cheese gets a massage in a lovely yeasty beer For Christmas we d love a misting system which gently sprays and automatically rotates each cheese but this is the stuff of a cheese mongers dream Can anyone make our dreams come true this Christmas 5 Do you sell pasteurised and unpasteurised cheese We sell both but mostly unpasteurised cheese you retain a higher good bacterial content which breaks down fat and protein giving flavour and aroma 6 We know all your cheese comes from Wales how do your source it Most of our cheese is Welsh but not all We ve worked with the same Welsh suppliers since we started all are small farms producing very high quality cheeses which we select and finish in Bermondsey We also stock about half a dozen guests which have been given residency at the stall e g Ragstone Stilton and Ossau Irati They re from fellow cheesemongers that we ve known for a long time like

    we decided to ask local artists and GCSE students from Harris Girls Academy East Dulwich to create food art work on the boarded up window So many people pass our door each day that we felt it would be wonderful for them and us to see some colorful new artwork especially during these grey winter days The artists spent the day with us drawing and painting on Monday 12th November

    Harris Academy East Dulwich The girls who are aged 14 15 years make bespoke cupcakes and donate 100 of the profits to charity Last year the H O P E team set out to raise 2 012 00 through sales from the H O P E social enterprise scheme by the start of the 2012 Olympics and the end of the school year We are absolutely delighted to say that the scheme has exceeped all expectations smashing their target and raising over 5 000 00 in total a truly amazing achievement which has enabled them to fulfill their pledges to their two nominated charities In August this year a group of pupils and staff travelled to the Kibuku District in Uganda to deliver a brand new ambulance along with 3 000 to be used for much needed medication at the rural community hospital Some money was also donated to specific cases such as helping to pay for a 2 year old boy to have a lifesaving operation and to cover his ongoing care to the age of 18 just 270 was enough to save his life On the 1st October the school also presented a cheque for 2 400 to

    Appeal Since September 2006 we have been working in partnership with the Tree Appeal the only London caterer to do so This means that a British Broad Leaved Tree is planted after each event in our client s name helping to counteract carbon emissions and ensure the continuity of our native woodland Our clients contribute to this campaign every time they use us for an event Use the links on the left of this page to see a list of those who have supported this wonderful initiative or to visit the Tree Appeal Website to find out more about the work they do In 2007 Sue was presented with an award by Sir David Bellamy OBE in recognition of our support to The Tree Appeal which ensured the planting of over 130 trees during the previous 6 months Later that same year she co director Graham Tooke and Sir David planted trees together at a nature reserve behind Kings Cross Station www treeappeal com Trees for Schools As a Tree Appeal partner we are able to choose the actual schools or other biodiversity sites where we want our trees to be planted Schools who receive a tree are able to
