    is lovely as it means I still get to see many of the team that I worked with originally What do you love about your job Apart from the fabulous lunches and the fact that the office is very close to the gym I grew up not knowing what I wanted to do But since I was discovered by Suzanne James I have obtained a real sense of direction I have already learnt so much and take great pride in that and in my job as a whole In an office that is full of hmmmm how shall I say it middle aged women ducks for cover I believe I bring a refreshing new viewpoint and dimension and hopefully more than the odd smile to their faces flexes a bicep with a cheeky grin What s your favourite food to eat One of our chefs Colin used to work at a Mexican chain so I m pretty sorted as he quite often likes to break out the fajitas If you could dine with anyone past or present who would it be Interesting question Probably at the moment Sue because she has a brain for food and it s all about taste and presentation Eating with her is always so interesting I would love to go on a tour of her favourite restaurants with her and I can only dream of the knowledge and experience I could then share with our clients What did you do before you worked for Suzanne James Catering I was at university I am actually finishing my 3rd year now and am very lucky that the business is supportive of me finishing my course I am set to graduate with a History Degree at the end if the year What do you like to do when

    will enjoy it and for the rest of the team it will be a chance to maybe experience the creation of some different dishes What s your favourite food to eat Any seafood but especially prawns and bream with a good Spanish wine of course If you could dine with anyone past or present who would it be I have to say with my grandfather He is 102 years old now but I would wish to have the kind of dinner we used to have more than 30 years ago At that time I was a teenager and he used to go fishing early in the morning I was always fascinated to see what he had caught and would help him to clean the fish before we would cook it together for dinner He was a big influence in my life and my decison to become a chef Where did you train I did my training in Spain in a city called Santiago de Compostela I moved there for five years to study hospitality and tourism whilst specialising in cooking What did you do before you worked for Suzanne James Catering I worked in Spain as a chef in social services such as elderly homes shelter centers or nurseries Then I moved to London and here I discovered my passion for fine dinning as I started to work in restaurants for the last two years I ve been working as an agency chef for many different venues catering companies corporate clients and hotels What do you like to do when you re not at work Believe or not I like cooking But I like to do it with my partner at our own peace He always asks me for things that challenge my cooking skills and I love to try

    the potential to esculate into major problems once at an event so I check the kit boxes are fully stocked the equpment list is accurate and that the van is loaded securely to avoid any accidents or damage en route I am also required to work back of house at events which involves setting up the kitchens unloading and loading the vans again and helping with clearing and organsing everything behind the scenes What do you love about your job Definitely the people I work with Although it s hard work and the days can be long we always have a good laugh and work really well as a team I like the fact that the job is quite physical I couldn t sit at a desk all day it would drive me crazy What s your favourite food to eat I like loads of things so this is very hard to answer but I think steak has to be one of my favourites and I love all the food we get to eat here at work it is definitely one of the perks of the job If you could go back in time what food would you tell your younger self to try sooner I never used to eat fish but since working for Suzanne James I really love it so that is my big discovery This came about because my sneaky brother who is one of the chefs here put lunch in front of me one day with a perfectly straight face and told me it was chicken I loved it and now I m a convert What did you do before you worked for Suzanne James Catering Well it was a fairly major change of profession I was a builder before It is lovely to be working

    I also stewarded several events last summer What do you love about your job I love meeting and interacting with people and working smoothly in a team which is essential in this job The fast paced pressure of the job is another thing that I love Having to ensure everything is running smoothly is something that keeps me busy all the time which I thoroughly enjoy What s your favourite food to eat My favourite food would have to be a lovely rare steak and dessert I am quite a carnivore and a huge foodie I am always up for trying new things and am very interested in all food If you could go back in time what food would you tell your younger self to try sooner Avocado I was adamant for a long time that I hated avocados and refused to eat them despite never having actually tried them One day I finally did and now they are one of my favourite foods I can t get enough of them What did you do before you worked for Suzanne James Catering I am still a student Suzanne James was my first employer and I love it Outside of studying and working I also provide ad hoc childcare If you could dine with anyone past or present who would it be Nelson Mandela without a doubt He is one of my idols and I think he would be remarkable company What do you like to do when you re not at work Sleep I don t get a lot of time outside of work and school so I go out with my friends and sleep it s not a bad life What are you studying and what are your long term ambitions I am currently studying Biology Drama and

    recent event pinning the bustle onto her dress What do you love about your job It s incredibly rewarding we frequently hear great feedback from our clients who tell us that their event was perfect and the guests were very impressed When the event is a wedding you are responsible for one of the most important days of a couple s life and you end up working closely with them They often have unexpected requests on the day To get that right is incredibly rewarding I graduated from a theatre school and there is a huge amount of theatre in creating an event so those skills come in very handy What has been your most challenging event to work on All of them are really unique each event brings it s own challenges and I approach each one as though it is the first one we ve ever done to ensure that there is no lapse in quality However we ve done some dinners for members of the royal family and they always keep everyone on their game Not least because of the extra levels of security and social protocol Tell us about a time when you saved the day at an event we re sure there must be some good tales to tell A few years ago we had a bride who ordered a wedding cake over the internet and didn t see it until the day When we opened the box the cake looked like an eight year olds birthday cake and the bride was incredibly upset We had to run out and secure a wedding cake at very short notice which we did I might add Which of the many venues you ve worked at is your favourite Probably the Horniman Museum because we manage every aspect
