    From a Northern Highland distillery situated at Edderton Again a lighter style the first two single malts were just to get you in the mood Tasting Notes Colour Pale Gold Aroma Toasted malt and peach aromas with a touch of raspberry A sweet vanilla note lingers Body Light to Medium Taste The palate is peppery initially with milk chocolate orange and ripe banana flavours With water Sweet vanilla and pear flavours Mild spices with a touch of ginger and milk chocolate Finish Medium and sweet Cask type Refill Sherry Hogsheads and First Fill Bourbon Barrels Now we really got going Speymalt 1994 43 Speymalt is made at Macallan Distillery matured and bottled at G M s Warehouse s in Elgin Macallan is one of the most famous and well loved whiskies in the world This bottling is no exception Tasting Notes Colour Dark Oak Aroma Tropical fruits and red berries complemented by subtle beeswax and aniseed notes A lingering hint of tobacco develops With water fresh fruit salad with pomegranate and vanilla Body Medium Taste Cracked black pepper with ripe banana pear and red apple These combine with charred oak and coffee flavours With water Kiwi and watermelon flavours initially Sweet honey and cocoa elements develop with lingering peppermint edge Finish Medium Cask type 1 st Fill and Refill Sherry Casks Benromach 1976 43 Established in 1898 the distillery experienced many closures and changes of ownership prior to 1993 when George Urquhart Stephen s Granddad rescued it After being extensively re equipped Benromach was officially re opened by HRH The Prince of Wales in 1998 Just two experienced distillers create Benromach using the finest Scottish barley and the purest spring water from the nearby Romach Hills They personally ensure that only the highest quality spirit is filled into sturdy oak casks before being left to mature at Benromach Distillery for many years Tasting Notes Colour Dark gold Aroma Decadent crème brûlée with orange touches and rich fruit cake aromas watch out for hints of kiwi and figs developing With water white chocolate with hints of coconut lemon and a subtle Sherry Body Biggish got fed up with saying medium Taste It s delightfully peppery at first with orange zest and apricot flavours followed by a creamy milk chocolate edge and subtle nuttiness With water it s less spicy with more intense chocolate A subtle menthol and gorgeous tobacco flavour Finish Long sweet finish Cask type 1 st fill and refill Sherry Hogsheads Linkwood 25 y o 43 Linkwood distillery is situated just on the outskirts of Elgin Tasting Notes Colour Dark golden Aroma Burst of freshness hay like notes with a defined hint of well toasted malt Some candied fruits emerge and a subtle Sherry influence lingers Herbal with a touch of Rosemary With water Toasted malt with a Sherried sweetness Hints of citrus notes lemon zest linger and a defined vanilla edge becomes apparent Body Medium Taste Mouth watering with a sweet and creamy edge Some delicate hints of

    of Elgin a little more age than the more common 12 with a bit more flavour and body Glenglassaugh Evolution 50 Purchase A new friend the distillery was first founded in 1873 and closed in 1986 In 2008 it was reopened The new owners got off to a promising start however the distillery was sold on March 2013 to Billy Walker and his two partners Geoff Belle and Wayne Kisweitter who also own Glendronach and Benriach This was a great move and the reborn distillery is now doing well This bottling is the Evolution back in 2008 when Glenglassaugh first re opened the guys picked casks that help the whisky mature quickly so this Evolution which is actually 3 years old but you could mistake it for something older Tomatin 14 y o Port Wood Finish 46 Purchase A new friend from an old favourite distillery You can t talk about Tomatin without mentioning the legendary Douglas Campbell MBE who is now their brand Ambassador having previously being distillery manager He has been at Tomatin for 52 years He received his MBE in 2013 for services to distilling and the local community The same thing isn t it Tomatin was founded in 1897 and in the mid 1980 s was the largest malt distillery in Scotland It went spectacularly bust in 1986 and was saved from closure by a couple of it s big customers thus becoming the first Scottish Distillery owned by the Japanese Today it is a smaller operation but is producing a couple of million litres of Alcohol a year This bottling is a limited release 14 years old and spending the last part of its maturation in a cask that previously held Port The soft gentle and after 14 years well matured Tomatin whisky really picks up the blackberry and raspberry from the Port cask all great late Summer early Autumn tastes Edradour 12 Caledonia 46 Purchase Defiantly a lot of our customers favourite and the one most have visited Edradour is the smallest distillery in Scotland producing less than 100 000 litres of spirit a year It is owned by my friend Andrew Symington who also owns independent bottler Signatory The distillery is situated in Perthshire near Pitlochry It s a proper farm type distillery very small with only 3 guys working there The equipment is quite old and Andrew is often seen in his overalls fixing a machine weather or not it needs fixing Andrew will fix it The small stills and the old fashioned equipment makes a complex meaty spirit I particularly like this bottling as it is a bit older 12 years a bit stronger 46 a bit richer more 1 st fill sherry casks unchilfiltered so a bit greasier in a good way and a good traditional Dram Talisker 10 45 8 Purchase When I was asking people about their favourite whiskies to think about including tonight Talisker came up a lot So I thought we would not mess about and

    corn usually in America they use a number of grains called the Mash Bill Bourbon has to be at least 51 Corn Maize but the other 49 can be rye wheat barley In order to call your whiskey note spelt with an e Bourbon you have to follow strict Federal Rules Larceny 46 Purchase This whiskey is a Wheated Bourbon the main small grain is wheat which makes a softer whiskey John E Fitzgerald Larceny to give it its full name is made at Heaven Hill Distillery Louisville Kentucky The distillery was founded after Prohibition ended in 1933 by five brothers called Shapira The Distillery is named after William Heaverhill the previous owner of the land After the second world war they wanted a Master Distillery so hired Earl Beam who s uncle was also a distiller called Jim Earls son Parker took over as Master Distiller and the current Master Distiller is Parkers Son Craig beam They make a lot of different whiskies using different Mash Bills and maturation style The legend behind the name is that John was a Treasury agent who would Steal whiskey under his control but only the best as he had great taste so good whiskey became known as Fitzgerald s Copper Fox Rye 45 Purchase Copper Fox Distillery is another Craft Distillery owned by Rick Wasmund situated in Sperryville Virginnia And founded in 2000 Again they use a small copper pot still and a small range of craft whiskies Rick spent some time working at Bowmore Distillery on Islay where he learnt a lot including Malting and has made Wasmunds Single Malt Rick also spells whisky without an e This expression is extremely interesting The Mash Bill is two thirds Rye one third Malted Barley The Malt is lightly smoked using 60 Apple wood and 40 Cherry wood Double Distilled Aged for 15 months Aged in used Bourbon Barrels like Scotch but with wood chips inside the casks Apple Wood and Oak Chips Wild Turkey 101 50 5 Purchase Some years ago I was at Whisky live in London and a Scottish sorry Hebridean Distiller mate of mine said come and meet the world s Greatest Distiller It turned out to be Jimmy Russell Master Distiller for Wild Turkey Distillery Lawrenceburg Kentucky Jimmy has been at Wild Turkey for over 55 years and has now been replaced by his son Eddie as Master Distiller Jimmy comes in on a consultancy basis Eddie is an apprentice having only served 30 years at Wild Turkey The Distillery used to be called Ripy until the Company Austin Nichols brought it in the 1940 s They renamed it Wild Turkey as this was the favoured drink at the annual directors Wild Turkey Shoot It was actually this expression of 101 proof 50 5 abv which was favoured Today the distillery is owned by Campari a Venetian Company who also own Glen Grant Very old fashioned Bourbon very much the same as in the 40 s or when
